This particular lavender variety, known as lavandin, is a hybrid of English lavender (L. angustifolia) and spike lavender (L. latifolia) grown in Spain and France. Due to its higher oil content, it is more cost-effective to produce than other lavender varieties. The whole purple flower buds are commonly used in tea blends, baked goods such as custards, cakes, and muffins, and as a seasoning in the classic French blend, Herbes de Provence. Keep in mind that this type of lavender has a mild pine-like flavor due to its camphor content, so use it sparingly in cooking just like rosemary or other strong-flavored herbs.
